THE COFFEE

 

This coffee from China is known by its producers as Geranium Dawn, a name drawn from its refined geranium-like florals and clean, vibrant character. The cup is fresh and expressive, offering brightness without excess.

The Sylina variety is a distinctive and relatively new discovery for us. It is a recently identified hybrid, found in a multi-varietal cultivation area in Chiang Mai, Thailand, and named after the discoverer’s daughter. Genetic analysis shows that Sylina combines traits from several established coffee varieties, resulting in a unique genetic composition.

This lineage contributes to vivid fruit expression and a pronounced yet balanced acidity. The result is a composed, articulate cup with notable clarity, complexity, and structure. 

FARM/PRODUCER

This coffee is grown at the beautiful Nest Manor Estate in Yunnan province and brought to us by Singularity Coffee. The next manor was planted out in early 2020 with a vast array of different coffee varieties, including Geisha, Sarchimor, Yellow Bourbon, Typica and more. 

By 2023, the farm was well equipped with washing, peeling, fermenting and degumming facilities along with a separate drying shed and drying equipment.

 

THE PROCESS

This honey-processed coffee showcases the Sylina varietal, with processing carefully selected to preserve fruit character and highlight the varietal’s natural clarity. Only fully ripe cherries are harvested, meticulously sorted, and depulped before a thorough wash to ensure cleanliness. The remaining mucilage is evenly distributed the same day to maintain controlled fermentation. Drying begins in a rotary dryer with precisely regulated airflow for consistency, followed by slow finishing on raised beds under low-temperature shade. The coffee is turned regularly over 7–10 days until optimal moisture is achieved, resulting in a clean, expressive cup with vibrant fruit definition.

 WHY WE LIKE IT

This coffee is subtle and well-balanced, revealing its character without demanding attention. A lemony sweetness sits alongside soft florals and citrus notes, with a low acidity. comparable to many Central and South American coffees.

Its profile shifts gently across different brewing methods, offering something distinctive whether brewed as filter, espresso, or anywhere in between.
